Year 2014. Pure herbal aromas dominate, with the addition of forest fruits (blackberry) and pepper. The smell of smoke and leather comes from the background.

They are intertwined with the smell of field flowers and ripe apricots.

Organic Cuvée Truške, Rodica

Year 2015. The wine is ruby ​​red in color with a copper hue, which indicates the almost archival age of this type of Refoško, Merlot and Cabernet Sauvignon. In the aroma, we detect rich aromas of ripe and overripe red fruits (plums, currants, sour cherries) as well as marmalades and jams, enhanced by notes of wood, spices and herbs. A touch of ethereality shows the longer maturation in wooden barrels.

Year 2014. Organic Refošk has a harmonious taste with pronounced juiciness and rounded tannins, an intense dark red color and cherry aroma, which is the result of careful manual harvesting of this autochthonous Istrian grape variety. The wine was fermented with the help of its own yeasts and matured in oak barrique barrels. It is done according to HADO science and ancient traditional practices.

Malvazija Premium, Guštin

Guština Malvazija mature Premium 2016 has a wonderful flower, freshness, fruitiness and a long, structured aftertaste. We harvest maximally ripe grapes with already brown pedicels and stalks. The grapes are ground in the cellar and macerated for up to 5 days. The wine matures for one year in oak barriques on its own fine lees, with weekly mixing and minimal addition of sulphur. Fine lees are removed from the wine and poured into stainless steel barrels, where it matures for another year. The wine is then bottled and kept in the cellar for another 9 months before being sold.

Merlot, Guštin

Guština’s Merlot matured Premium has exceptional quality, fruitiness and a unique taste of a structured matured wine. The grapes ripen on 60-year-old vines. Maximum ripeness grapes with already brown pedicels and stalks are harvested. Merlot grapes are ground in the cellar and macerated for up to 21 days. The wine matures for one year in oak barrels on its fine lees. It is mixed with minimal addition of sulfur. Then the wine is decanted and fine lees are removed. The wine then matures for another year in stainless steel barrels. The wine is then bottled and kept in the cellar for another two to five years before being sold.

Pinela, De Adami

Year 2019. One of the oldest Vipava wine varieties, more feminine than green, but no less interesting, fresh, popular for centuries. Pinela is also characterized by a gentle light greenish-yellow color, a fairly intense flower, in which there are a wide variety of floral and fruit perceptions, especially citrus and peaches. The taste of Pinela is rounded off by pleasant fresh acids, which connect the other features of this noble wine in a harmonious body. Due to its distinct drinkability, Pinela is a good accompaniment to home-made prosciutto, as well as other meat dishes, fish and seafood dishes.

Merlot barrique, De Adami

Year 2004. Merlot barrique is also one of the most pleasant wines from this winery. Its color fascinates us with cherry-red shades and a crimson glow, and its smell is quite intense, rich, mainly fruity and spicy. In the flower, aromas of forest fruits, ripe plums, and roses are revealed. The wine is dry, warm, tasty and harmonious, we can encounter a whole range of tertiary perceptions, typical of aging in wooden barrels. His body is full and stout; it has a lot of dry extract and if we serve it with smoked cured meat products, the experience of this wine will be even better. Year 2004.

Vintage 2010. A superb dry red wine that charms everyone who likes to reach for lighter red wines. This is without a doubt one of the best Pinoys from the Vipava Valley, because with its flowers and aroma, and above all the taste of fresh forest fruits, it quickly attracts wine lovers. The variety, which is otherwise famous for its capriciousness, proves its harmony in the Zaloščan cellar, and it likes to be paired with traditional Vipava cuisine, as well as many other lighter meat dishes. Year 2020. Special because it is made only from Refoško. It is semi-sweet, with a very fruity taste of strawberries and cherries. It can be drunk on its own as an aperitif (with ice) or with vegetable dishes and desserts.

Vintage 2017. A special wine from a variety that is almost extinct. This is an old variety of Red Muscat, or as we call it locally – Cipro. Ours is special because it is aged in wooden barrels, and the harvest takes place when the grapes have already withered. This way we get a strong dessert wine that already resembles a liqueur.

Vintage 2019. Vitovska Grganja is an old autochthonous white wine variety, widespread in the Karst. Together with Terano, it is included in the list of wines with protected origin. Vitovska grganje is an elegant wine with a moderate alcohol level.

Carsus, Štoka

Year 2015. Karst entered history with the Roman name Carsus. The word is of ancient origin and comes from the root kara, which means stone. Only this one consists of Cabernet Sauvignon, Merlot and Teran varieties. Dark brown-red color that intertwines and blends harmoniously with the scent of noble oak in which the wine has matured for 5 years or more. Teran gives it excellent freshness.

Year 2020, we produce Teran wine from the Refošk na Karst variety. The character of this wine is strongly influenced by the karst red soil of Terra-rossa. Judging by old records, Teran was already famous in Roman times as a wine with healing properties. Gourmets prefer to enjoy it with Karst prosciutto, cured meats and alongside red meat.

Rumeni muškat Giovanin, Krmac

Vintage 2017. Traditional aromatic wine, the smell of which reminds us of lemon, meadow flowers and a slight honey note. In the mouth, the sweet softness and lemon freshness, obtained by 24-hour maceration, are pleasantly balanced, the typically slightly bitter tannins thus dissolve and prolong the pleasure of the sip. It can be used as an aperitif or dessert wine.

Oro nero cuvee, Krmac

Year 2016. Vinification took place varietal, 30 days of controlled maceration, 3 years of aging in used oak barrels. A big red wine with an intense ruby ​​red color is in harmony with a symphony of aromas ranging from red ripe fruit (cherries, blueberries, cherry jam) to a palette of spices, dominated by vanilla, coffee, cocoa notes and pepper. In the mouth we can taste velvety tannins and minerality, which gives the wine the characteristics of terroir. The taste is persistent and soft, elegant and warm.

Syrah, Krmac

Vintage 2016. After harvesting, the grapes were macerated for 10 days, then the wine matured for 2 years in used oak barrels. The wine is cherry-pink in color and the flower is extremely fruity, in which we can recognize the scent of blueberries, with the scent of plum in the background. Because of the wood, the aroma also reminds us of dark chocolate, black pepper, menthol and ground coffee. The taste is consistent with the aroma of the wine, we also detect a mild minerality, as well as fruitiness and pleasant tannins. The wine is harmonious.

Year 2019. The wine is accompanied by a sparkling light pink color with copper-red shades. A pleasant note of raspberry, blackberry, cherry, strawberry, lychee, peach and other red fruits already tells us on the nose that we are in front of a very fruity fresh wine.

Year 2018. The wine has an intense ruby ​​color with distinct purple hues, which are even more accentuated in its youth. In the wine, we are always impressed by the extremely complex and intense floral notes of blackberries, raspberries and blueberries. We also notice black pepper and graphite notes.

Year 2020. An autochthonous variety of the Vipava Valley, echoing Vipava’s rich past and sunny future. A specific variety, both in the vineyard and in the glass. Our green, like the other varieties, is grown traditionally, the selection of grapes is harvested, followed by maceration for up to one week and pressing in stainless steel containers, followed by the end of fermentation and the continuation of natural processes in wooden and stainless steel containers.

Pet Nat, Cultus

Year 2021. The production of Pet Nat is based on a single fermentation that starts directly with sweet must. The wine that is already fermenting is bottled, and the fermentation process continues in the bottle until the remaining sugar in the young wine is completely consumed.

SANTOMAS

refošk, santomas

The color is opaque, ruby. The flower is ripe, juicy, moderately accentuated, compact, variegated and very special. Black fruits, pepper, tar, smoke, wood are beautifully woven. In the mouth it is dry, bold, with medium-high tannins and higher ripe acids. The taste in the mouth is intense, luxurious. A wine with stamina and a long aftertaste. Long-lasting and compact.

CABERNET SAUVIGNON, SANTOMAS

The color is opaque, purple. The flower is moderately accentuated, youthful, inviting. More after ripe dark red than black fruits, with a nice smoky, simple layer. It is dry in the mouth, the tannins are moderately ripe, the acids are higher, the body is stronger. A very nicely presented cabernet, without excesses, where everything stands. In Slovenia, there are many called, but few selected Cabernet Sauvignons. This one is among them.

Steras

Malvazija Saurin Hills, Steras

The color is a gentle lemon yellow. The flower is lively, aromatic, youthful and clearly varietal. Apricots, pineapple, grapefruit, a nice layer of dry spices can be detected. In the mouth, the wine is dry, the acidity is moderate, the body is stronger. With an abundance of flavor that spreads beautifully in the mouth. An obvious change of style in the cellar, which advocates clear definitions. Probably the best Malvasia from this winery so far and one of the best in our country.
